Manufacturing method and cultivation method

About the cultivation method

Organic farming. Harvested in early September. To maintain good acidity, harvested 7 to 10 days earlier than red wine Nero d'Avola. Only fully ripe grapes are carefully selected and used.

About the manufacturing process

100% organically grown grapes certified by BioAgricert are used. After destemming, the grapes are pressed. They are then immediately transferred to the fermentation tank. The skins are removed at this time to minimize contact between the juice and the skins. The temperature is controlled so that it does not exceed 18°C, and the fermentation takes place for approximately 10 days.
